A classic French upside-down tart made with cherry tomatoes and a creamy Stracciatella or Buratta, this makes for a great mid week meal or weekend brunch treat. I like to serve with some leftover roast chicken for extra protein and a side salad to bring in some extra fiber.

Ingredients

  • 400gcherry tomatoeshalved
  • 3garlic clovesthinly sliced
  • 1tbspolive oil
  • 1tspdried oregano
  • 1tsphoney
  • saltand black pepper
  • black pepper
  • 150gAll purpose flour blendYou can substitute Gluten Free Flour if you prefer
  • 40gParmesanfinely grated
  • 0.5tspsalt
  • 50mlolive oil
  • 1egg
  • 2tspcold waterif needed
  • 125gstracciatella
  • lemon zestof ½ lemon
  • extra virgin olive oil
  • flaky sea salt

Method

    Preheat the oven to 190°C fan. Line a 23cm ceramic pie dish, grease with a drop of and line with baking paper.

    Drizzle the and into the dish. Scatter over the garlic, oregano, a pinch of and . Arrange the cut side down, packing them tightly together.

    In a bowl, mix the flour, and . Add the and and mix until a dough forms. You may need to use your hands to bring the dough together. If it feels dry, add 1-2 teaspoons of .

    Roll the dough out into a circle onto some parchment paper and flip it over the tomatoes, tucking in any edges. Remove parchment paper.

    Bake for 35-40 minutes, until the pastry is golden and firm. Leave to rest for 10 minutes, then carefully invert onto a serving plate.
