This no-boil, vegetarian baked tortellini casserole is an easy, cheesy dream, requiring just 6 ingredients and a simple dump and bake method. Only a few minutes of prep required and no need to pre-boil your tortellini!

Ingredients

  • 1.5ouncesfresh baby spinach~ 2 cups
  • 4ouncescream cheese~ 8 tablespoons; cut into small cubes
  • 20ouncescheese tortellini~ 5 cups; fresh or frozen (thawed)
  • 22ouncesmarinara sauce~ 2.75 cups
  • 1cupvegetable brothor chicken broth
  • 8ouncesshredded low-moisture mozzarella cheese~ 2 cups

Method

    Preheat the oven to 350°F and prep ingredients by chopping the spinach and cutting the block of into small cubes.

    To a 9×13-inch casserole dish, add the chopped spinach and the cubes of sporadically throughout.

    Add the tortellini over top in an even layer.

    Pour the over the tortellini. Then, pour the into the marinara jar, put the lid back on and shake the jar to release any leftover sauce, and pour the infused broth over the casserole. Cover with aluminum foil.

    Bake the tortellini casserole covered for 10 minutes. Then, remove the foil and stir. Bake again, uncovered for an additional 10-15 minutes, until the sauce has thickened.

    Remove the casserole from the oven and add the cheese on top in an even layer. Set oven to broil and place the casserole back in until the cheese melts, bubbles, and starts to brown (watch closely as this happens quickly).
