This creamy Carrot and Roasted Red Pepper Feta Dip makes for a delicious appetizer or snack, and it's also a great sandwich spread! It's so easy to make and it's always a hit.

Ingredients

  • 2red bell peppersdeseeded and sliced in half
  • 3largecarrotscut into 1-inch pieces
  • 1headgarlic
  • olive oilto taste, for roasting
  • saltto taste, for roasting
  • 1can (15 oz)white beans
  • 7ozfeta cheese
  • 0.3cuplemon juicefreshly squeezed
  • 2tablespoonolive oil
  • 1.5teaspoonkosher salt
  • 1.5teaspoonsmoked paprika
  • 0.5teaspoonred pepper flakesoptional, adjust to taste (up to 3/4 tsp)

    Preheat oven to 400°F.
